Chez la vache laiti\u00e8re haut\u2011productrice ils repr\u00e9sentent normalement <strong>18\u202f\u2013\u202f28\u202f% des acides gras totaux du lait<\/strong>\u202f.<br \/>\nPlusieurs \u00e9tudes de terrain montrent qu\u2019un niveau \u00e9lev\u00e9 de DNFA dans le lait de tank est li\u00e9\u202f:<\/p>\n<ul>\n<li>\u00e0 <strong>une meilleure teneur en mati\u00e8re grasse et en prot\u00e9ine<\/strong> (donc un meilleur prix du lait)\u202f ;<\/li>\n<li>\u00e0 <strong>un revenu additionnel<\/strong> estim\u00e9 \u00e0 16\u202f\u20ac par 100\u202fvaches et par jour (diff\u00e9rence de MG\u202f+\u202fMP entre fermes \u201cHaute DN\u201d\u202f\u2265\u202f24,6\u202fg\/100\u202fg AG et \u201cBasse DN\u201d\u202f\u2264\u202f23,1\u202fg\/100\u202fg AG)\u202f.<\/li>\n<\/ul>\n<p>En bref, suivre les DNFA, c\u2019est suivre directement l\u2019efficacit\u00e9 fermentaire, la sant\u00e9 ruminale et la rentabilit\u00e9.<\/p>\n<h3>2. Une fois dans l\u2019\u00e9pith\u00e9lium alv\u00e9olaire, l\u2019ac\u00e9tate est activ\u00e9 en ac\u00e9tyl\u2011CoA puis l\u2019enzyme cl\u00e9 ac\u00e9tyl\u2011CoA\u2011carboxylase (ACC) forme le malonyl\u2011CoA, amorce donnant le coup d\u2019envoi au complexe fatty\u2011acid\u2011synthase (FASN). Celui\u2011ci ajoute it\u00e9rativement des unit\u00e9s C\u2082 (issus du malonyl\u2011CoA) jusqu\u2019\u00e0 C16\u202f; une thio\u2011est\u00e9rase de cha\u00eene courte lib\u00e8re pr\u00e9cocement les acides gras \u00e0 4\u201314\u202fcarbones, expliquant leur abondance relative dans le lait. L\u2019\u00e9nergie r\u00e9ductrice (NADPH) provient du cycle des pentoses phosphates et de l\u2019isocitrate\u2011d\u00e9shydrog\u00e9nase. Le processus est stimul\u00e9 par l\u2019insuline (qui augmente le flux de glucose et l\u2019expression d\u2019ACC\/FASN) et frein\u00e9 par les isom\u00e8res trans\u201110, cis\u201112 CLA issus d\u2019une bio\u2011hydrog\u00e9nation ruminale anormale : ces isom\u00e8res abaissent l\u2019expression d\u2019ACC\/FASN et activent l\u2019AMP\u2011kinase, r\u00e9duisant ainsi la synth\u00e8se des DNFA et faisant baisser la fraction C4\u2011C16 du lait\u202f.
